Monkfish with Mustard, Rosemary and Lemon

Ingredients
- 1 1/2 lb monkfish or other 1-inch thick white fish
- 1 T Dijon mustard
- 1 T lemon rind, grated
- 2 t Rosemary, fine chop
- 1 1/2 t olive oil
Instructions
- Mix the lemon rind, rosemary, mustard, and olive oil in a bowl. Season to taste.
- Coat the fish, then bake at 400 until the fish flakes easily with a fork.
- Plate and serve.
